You Must Try: Mexicali Dip

It took me a while to try this dip (I’m super picky and don’t like mayo or sour cream)…but finally I did and I have to say that I love it. My friend Keisha introduced us to it and since then we’ve made it for both our families and everyone loves it. We brought it to our Christmas in October celebration last weekend and it was a hit.

Ingredients

1/2 tsp. cayenne pepper
1 tsp. cumin
1 c. mayonnaise
1 c. sour cream
1 small can Mexicorn
8-10 oz. shredded Cheddar cheese
2/3 bunch green onions, chopped
Paprika
Fritos Scoops

It’s as Easy as 1, 2, 3…

  1. Mix together cayenne, cumin, mayonnaise, sour cream, Mexicorn, Cheddar cheese and onions.
  2. Spread into a serving dish or pie plate; sprinkle with paprika.
  3. Serve with Fritos Scoops.

(We didn’t have paprika on hand so we had to leave that out, but it still turned out great!)

  5. I make a similar dip but use cream cheese instead of sour cream and Rotel instead of the spices. You should try it this way too, so good!
