Kelsey's Favorite Mint Ice Cream Dessert
Eric has made this dessert for my birthday the past three years, and before that my mom made it for me for many years. It is a birthday tradition that means a lot to me and I'm so glad it is continuing into my adulthood. It has to be done in a few different steps, so it typically takes us at least two nights to make it. Knowing that makes me feel extra special when someone puts in all that time just for me. So add this to your Pinterest food board because you gotta try it!
(Please know that just because I am writing this post does not mean I did any of the work. I did take a few photos, but Eric was the one who made it.)
What You Need
1/2 c. margarine 1 lb. Oreos, crushed 1/2 gal. mint chocolate chip ice cream, softened 2 c. powdered sugar 1-1/2 c. evaporated milk 1 c. semi-sweet chocolate chips 1 tsp. vanilla 1/2 c. butter or margarine
Step 1: Melt 1/2 cup margarine and mix with crushed Oreos. Press into 9x13-inch pan. Chill.
Step 2: Spread softened ice cream on top of crust. Freeze.
Step 3: Mix powdered sugar, evaporated milk, butter and chocolate chips in saucepan and bring to a boil. Boil for eight minutes, stirring constantly. Remove from heat and add vanilla. Cool.
Step 4: Pour chocolate sauce over ice cream and freeze.
